Easy Pumpkin Chili!

Easy Pumpkin Chili!

This weekend I thought I'd try a new chili recipe. I wasn't so sure about it, this one has no beans! But I was pleasantly surprised. This is a GREAT chili.
I used 1lb of ground beef and 1lb of ground turkey. 3/4 of a green pepper and a medium onion and 3 cloves of garlic minced.
After everything was browned I added these. The 28 oz can of tomato's is crushed, the 14.5 oz can is diced. Also added 2 tsp chili powder, 3/4 tsp smoked paprika, 1/4 tsp chipotle chili powder,  1 tsp cumin and 1 1/2 tsp pumpkin spice.
I brought it to a boil and then simmered it for about a half hour, covered.
I wanted to try some thing different and since this was a pumpkin chili I figured I couldn't  go wrong by finishing this off in a pumpkin.
So I cleaned it out really good.
Oiled it.
Filled it with the chili that was cooked on the stove top.
And popped it in the oven. 375 degrees for 25 minutes. Make sure to put it on a cookie sheet with a lip. it bubbles over a little bit. You can check the progress of your pumpkin with a fork.
After 25 minutes I added these to the top. It is just a Pillsbury biscuit that I flattened out for a top and a stem.
I added it to the top and threw the whole thing back in the over for about 10  more minutes. Or until it's nicely browned.
And this is how it looked when it was finished. This is suppose to look like a pumpkin stem with leaves....not so much.
I baked up the remainder of the biscuit's for dipping and it was great!
A really easy recipe that was tasty and healthy.
