I don't know if you've ever heard me say this before but I REALLY love entertaining. And what I LOVE even more is getting ready. The cleaning. The shopping. The prepping. The cooking. AND THE DECORATING! I even love the clean up when the house is all organized again. So when I ran across these cuties at the Dollar Store when I bought the pumpkins one's a couple weeks back, (see Dollar Store Place Mats 1) I was gitty!

The cooking part of my 2 person dinner party consisted of a recipe I found on Facebook. It's called Spinach Chicken Alfredo and you can find it on the
12 Tomato's web site. Really really tasty. It just kind of looks like some one threw up on the right side of my plate.
Anyhow, it's really good. But don't over cook your chicken like I did.

DESSERT!! Dessert was awesome. Another Facebook recipe. Pumpkin Pie Cupcakes from TodaysMama web site. Lovely!
And I also made Pumpkin Spice No Bake Cheesecake. That's what is in the wine glasses and garnished with a soft molasses cookie. I found that recipe on the internet one day when I was surfing. I'll list it at the bottom in case your interested.

This milk glass cake stand I bought at an antique store made a great display for my desserts.


It was a great night with really great company. Until the weather sirens went off and all of a sudden we were under a tornado warning and my gracious guest had to leave.
Here is the very easy recipe for the
PUMPKIN SPICE NO BAKE CHEESECAKE
7oz 1/3 less fat Philadelphia Cream Cheese
(all this time I've been making this and I just noticed it calls for 1/3 less fat cream cheese. This could have been like a diet dessert). Kinda.....
1/2 cup pureed pumpkin ( canned is fine) (I also top it off high, I like pumpkin).
1 tsp vanilla
1 tsp cinnamon
1 tsp pumpkin pie spice
1/4 cup brown sugar un packed
8 oz Cool Whip Free, thawed.
(just noticed the "Free" in the Cool Whip too).
In a large bowl using an electric mixer, whip cream cheese, pumpkin, vanilla, cinnamon, pumpkin pie spice and brown sugar for a few minutes until fluffy. Add Cool Whip and blend until smooth.
Easy Peasy and sooooo tasty. Enjoy!
